Southwestern Salad with Cilantro-Lime Vinaigrette

All I can say is….wow, this is GOOD!

I went to a conference last Saturday about women’s health. The information was excellent, the speaker was funny…and then there was the FOOD! In fact, the food was so good that everyone kept asking for the recipes!

So here is one of them. It’s a delicious salad that’s both healthy and filling. I fixed it as directed, but you could easily double the vinaigrette recipe and then use it as a marinade for some grilled steak or chicken on top for the carnivores in your family. Either way, this is one salad that will be working its way into your dinner repertoire very soon. Enjoy!

Southwest Salad with Cilantro-Lime Vinaigrette


  • 1 head romaine lettuce, chopped
  • handful of grape tomatoes
  • 2 green onion, sliced (I used red onion)
  • 1 medium sweet bell pepper, diced
  • 1/2 C black beans, drained
  • 1/2 C corn, drained
  • 1 avocado, sliced
  • 1/4 C shredded Mexican-style cheese
  • 1 handful of tortilla strips (optional)
  • Cilantro-Lime Vinaigrette (recipe to follow)

Combine all ingredients (except dressing) in a large bowl. Just before serving, spoon the dressing over the salad. Enjoy!

Cilantro-Lime Vinaigrette

  • 1/2 C finely chopped cilantro
  • 1/2 C olive oil
  • 1-2 T fresh lime juice
  • 1 T red wine vinegar
  • 1 -2 cloves minced garlic
  • 1/2 tsp oregano
  • salt and pepper to taste

Pour all ingredients in a clean glass jar and shake to combine. Let the flavors blend for at least 30 minutes before serving.

PS This salad inspires me to try to grow romaine lettuce this year (I heard lettuces are super easy to grow), cherry tomatoes (my sons would eat their body weight in these each day if we could afford it!) and cilantro.

Wouldn’t this dish be even more satisfying with veggies and herbs you grew yourself?
