All-American Cowboy Salad

This salad is delicious, though not low-cal.

One of the only salads my husband will eat, it’s definitely hearty enough for a main dish.

I keep most of the ingredients on hand, making this one of my go-to recipes for busy weeknights or a weekend lunch. It only takes 15 minutes to make from start to finish AND it tastes good. Giddy-up.

To make this dish a bit more figure-friendly for us cowgirls, serve it with low-fat dressing and a side of fresh fruit, y’all.

All American Cowboy Salad

8 oz. ham or turkey

1 cup cherry or grape tomatoes

1 can corn, drained

4 oz. chunk cheese, cubed or shredded cheese

1/3 C red onion, sliced

1 bunch of romaine lettuce, washed and chopped

1/2 C almonds

ranch dressing

Toss first five ingredients together into a large bowl. Line a large serving platter with lettuce. Top with ham mixture, sprinkle with almonds and serve immediately with dressing.

Yeehaw!
